Low Carb Eggplant Pizza

What to do when you are on a diet and are craving pizza?!

Eggplant pizza! Ive tried low carb pizza crust and it just didn't come out tasting quite how I've wanted it too. I had some eggplant in my fridge and decided why not? 

And the results: Delicious!!

All you need is: eggplant slices, olive oil, mozzarella cheese, and pepperoni.

You can add other ingredients to your pizza if you'd like, this is what I had on hand.

You want to sear the eggplant about 2-3 minutes each side on medium heat, with a touch of olive oil.

Next, on a preheated oven of about 450 degrees. Place your eggplant on a rack, 
add your toppings and bake until cheese is melted.
